Manicotti and Mustard Greens 
This year is my very first year killing growing a garden and finally I was able to harvest something aside from herbs out of our garden! A few days ago I harvested 10 VERY large Mustard green leaves and a handful of radishes. It was a ruff start the mustard leaves almost didn’t make it! After harvesting the leaves I went in the garage to take a look at hunnies latest project (removing the paint off our coffee table) and in the process I completely forgot that I left the mustard greens out in a bucket in the hot sun. By the time I went out to grab them they had already begun to wilt. But all was not lost, I tossed them in a bowl of cool water wrapped them in paper towels and put them in a plastic bag in the fridge. When I went back and looked at them today they were nice a crisp and ready to cook! So on to the recipe!

Preheat over to 350 degrees. Spray a 13×9 inch baking dish with nonstick spray.
In a large skillet, combine meat, onion and garlic, and cook over medium-high heat until browned and crumbly, drain.
In a large bowl combine meat mixture, 2 cups of mozzarella, cottage cheese, and cream cheese, mixing well. Fill each manicotti noodle with mixture. Place filled noodles in prepared dish. Pour tomato sauce evenly over noodles. Top with remaining 1 cup of cheese. Cover with foil and bake for 30 minutes. Remove foil, and bake for 10 additional minutes, or until cheese is browned and bubbly. Garnish with oregano.
Mustard Greens

- 2 bunches mustard greens
- 1 can chicken broth
- Salt (opt.)
- Garlic powder
- Water
Wash and tear up greens into pieces. Place in large pot, add broth, salt and garlic powder to suit taste. Fill pot with enough water to cover greens and cook to desired texture (I only cook mine for about 3 mins I like them very crunchy).

I agree, at the moment I am also growing collards, mustard, and 2 types of swiss chard. I can't wait for the swiss chard… yum! But I have to admit I've never eaten dandelions (adding to my list of things to try!)
