Another Drink Please!!
 Cream Cheese Swirl Brownies 

The morning of the 4th my girlfriend called and let me know that her and her hubby were coming over to spend the 4th with us… she was bringing Turkey Burgers, Bean Dip and Chips.  Oh and of course… beer!  I already marinated chicken and cooked some pasta for a salad the night before, but hadn’t even put a moments thought in to dessert.  My first idea was to make some sort of cake or cupcakes since her birthday was on the 3rd.  However it occurred to me that my girlfriend hated all cake type desserts.  Seriously???  Who hates cake???  Well I immediately ran in to the office and tore through every cookbook, magazine and scrap of paper I could find in search of something… anything that met my strict limitations.  Also you must remember it was the 4th… 150,000 people in my little city… NO PARKING!!!  Oh and if I haven’t mentioned it in the past… I don’t know how to ride a bike… needless to say I had to make something that wouldn’t require a trip to the store!  Suddenly there it was staring up at me from a pile of magazine clippings from who knows how long ago… Brownies!!!

I later found out she still considers brownies to be a cake like dessert… therefore she’s not a fan of them either!  Oh and I completely forgot she hates cream cheese too!  I guess it just wasn’t my day!  Girlfriend aside the kids loved them, girlfriends hubby loved them, hunnie loved them, and more importantly I devoured them!

I despise long complicated recipes with tons of ingredients.  In glancing at this recipe I thought it was going to be one of those.  Since the chicken was marinated out of a bottle and the pasta salad was something I make all the time, I disregarded my reservations and got to work.  I was pleasantly surprised how quickly everything came together, it was not complicated at all.  It was not too sweet or heavy but still had the richness and density of brownie… Yum!!

Recipe: Cream Cheese Swirl Brownies

Ingredients

Swirl:

  • 4 ounces Cream Cheese, at room temp.
  • 2 Tbl. Unsalted butter
  • 1 egg
  • 1/4 cup sugar
  • 2 Tbl. flour
  • 1 tsp. Vanilla

Brownies:

  • 8 Tbl. Unsalted butter
  • 4 ounces unsweetened chocolate
  • 1 cup sugar
  • 1/4 tsp. salt
  • 2 eggs
  • 1/4 cup flour

Instructions

  1. Preheat the oven to 350 degrees. Line an 8-inch square baking dish with foil, leaving a 1-inch overhang on 2 sides. Mist foil with cooking spray.
  2. Make swirl: Using a mixer on medium speed, beat cream cheese and butter until creamy. Add egg: beat until smooth. Beat in sugar, flour and vanilla until smooth and set aside.
  3. Make Brownies: In a double boiler, melt butter and chocolate, stirring often. Remove from heat: stir in sugar, vanilla, and salt. Transfer to a bowl; cool slightly.
  4. Using a mixer on medium-low speed, beat eggs into chocolate mixture, one at a time. Sprinkle flour over mixture and gently stir in.
  5. Spread 1/2 of the brownie batter in prepared pan. Carefully spread swirl mixture over brownie batter. Spoon remaining brownie batter on top. Use tip of a knife to gently swirl through both batters to form a marble pattern.
  6. Bake until a toothpick inserted into center comes out clean, 40 to 45 mins. Let cool on a wire rack for at least 1 hour. Remove brownies from pan to cutting board using foil to lift them out. Peal off foil and cut in to squares.
