Party Pasta Salad 
This is a recipe I serve at almost every party I have. It’s so simple, quick and it’s so easy to make in large batches and customizable based on what ever you have available. I’ve made this same recipe using olives, roasted red peppers, cucumbers, sun dried tomatoes or anything else I’ve had around the house.
Recipe: Pasta Salad
Ingredients
- 1 lb Rotini (Spiral) pasta, Cooked according to package
- 1/2 Cup Chopped Green Pepper
- 1/2 Cup Chopped Red Pepper
- 1/2 Cup Chopped Tomatoes
- 1/2 Cup Canned Artichokes, Roughly Chopped
- 1/2 Cup Chopped Red Onion
- 1 Cup Cubed Cheese (I use 1/2 C Cheddar and 1/2 C Pepper Jack)
- 1/2 Cup Sliced Dry Salami (You could also use Pepperoni or Ham), roughly chopped
- Italian Salad Dressing (Recipe to follow)
Instructions
- Toss all ingredients together and serve.

Recipe: Olive Garden Italian Salad Dressing

- 1 1/2 Cup Bottled Italian Dressing
- 2 Tbl. Parmesan Cheese, Grated
- 2 Tbl. Sugar or substitute
- 1 large raw egg
- OR 2 Tbl. of Mayonnaise

Instructions
- Mix all ingredients together and process in a blender on high speed 1/2 minute or until smooth.
- Pour on top of salad and serve.
