Yogurt Pancakes with Peanut Butter Syrup 

Recipe: Yogurt Pancakes

Ingredients

  • 3 eggs
  • 1 1/2 cups yogurt (I used 1 cup vanilla and 1/2 strawberry)
  • 1 1/2 cup buttermilk
  • 1/2 cup butter, melted
  • 2 cups all-purpose flour
  • 3 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 3 Tbls. sugar

Instructions

  1. In a large bowl, whisk together eggs, yogurt, and buttermilk .
  2. Then whisk in melted butter a small amount at a time in order to temper the eggs.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt and sugar.
  4. Add dry mixture to wet mixture and combine until all moistened. The batter will be thick.
  5. Spoon batter onto hot oiled pan or skillet. Use spoon to help even spread out the batter.
  6. Cook until both sides are golden brown.

Recipe: Peanut Butter Syrup

Ingredients

  • 3/4 cup maple or pancake syrup
  • 1/4 cup peanut butter

Instructions

  1. Add peanut butter to syrup and whisk to combine.
  2. Syrup will be thick pour over warm/hot pancakes to melt.
  3. If too thick, heat for 30 seconds in the microwave.
