Jam Stuffed French Toast 
Recipe: Jam Stuffed French Toast
Ingredients
- 4 ounces cream cheese, softened
- 1/3 cup jam or preservesSalt
- 6 slices bread (I used large slices of sheepherders bread)
- 2 eggs
- 1 cup milk
- 2 tablespoons sugar
- ½ teaspoon vanilla extract
- 3 cups cornflakes, crushed
- 2 tablespoons unsalted butter
Instructions
- In a small bowl, mash together the cream cheese, jam, and a tiny pinch of salt until just combined (streaks of jam are fine).
- Spread on 3 slices of bread, and top those with the remaining 3 slices, pressing gently to form sandwiches.
- Grab 2 shallow dishes, such as pie plates. In the first dish, beat the eggs, milk, sugar, and vanilla until uniform. In the second dish, place the cornflakes.
- In a large nonstick skillet over medium heat, melt butter and heat until it stops foaming. Dip both sides of 3 sandwiches in the batter to coat thoroughly, then dip in cornflakes, patting them over the entire surface to form an even coating.
- Place them in the skillet, and cook until deep golden brown on both sides, about 4 minutes on the first side and 3 ½ minutes on the second side, serve at once, garnishing as desired. (We served these with maple syrup and bananas but they would be great with fresh whipped cream and/or powdered sugar.
